Thanksgiving is coming to a start but that means Christmas is right behind it! That calls for a healthy Christmas cookie to bring to the party!
Salted Dark Chocolate Covered Coconut Cookies are a great healthy cookie to have this holiday! It has 1 cup of shredded coconut, 3 Tbsp. of coconut milk (can), 1 Tbsp. of date sugar, 1 Tbsp. of cashew butter, 1/2 tsp. of vanilla extract, 1 cup of dark chocolate chips, and 1/2 tsp. of unrefined salt (real, pink, or Celtic salt).
Add shredded coconut to the blender and make sure it becomes fine powder (about 30-60 seconds). Then you will add the remaining cookie ingredients and blend until it becomes a dough. If it becomes too dry add more coconut milk and only 1 tsp. at a time! Use a spoon to scoop out 10 evenly shaped balls and press them to make a flat cookie. Place them on parchment paper ( baking sheet) and freeze for 15 minutes to firm up. When the cookies are firm melt the chocolate chips and use two forks to dip each cookie into the chocolate. Repeat with the remaining cookies. If you have extra chocolate left over then put it into a party bag and drizzle the chocolate over the cookies like the photo shown on the website above. Grind some pink salt over the cookies and refrigerate or freeze to firm the chocolate up.
